Memorable Mashed Potatoes
INGREDIENTS: |
3 large Russet Potatoes, peeled and cubed 1 Tablespoon butter or margarine 1/4 cup chopped green onions 1 lemon |
INSTRUCTIONS: |
-Juice the lemon and set aside the juice and the rind. -Put the potatoes in a saucepan and cover with salted water. -Add the lemon rind and bring to a boil. -Reduce heat and cook 15 minutes or until potatoes are tender. -Drain off the water and remove the lemon rind. -Using a potato masher, mash potatoes until blended and smooth. -Add 1 teaspoon of lemon juice, the green onions, and salt and pepper to taste. -Stir until creamy. |
