Corn Casserole
INGREDIENTS: |
1 medium onion chopped
1 small gr. pepper, minced 1/2 cube margarine or less 2 eggs 1 package “jeffy” corn muffin mix 1 can whole corn 1 can cream style corn 1/2 pint sour cream 1 cup cheddar cheese (grated) |
INSTRUCTIONS: |
Saute onion, pepper in butter, Beat eggs and add muffin mix. Then add both cans of corn with juice. pour into 8×13 pan. Spoon onion,pepper mix on top, then sour cream, then cheese. bake 350 degrees F for 30 minutes. Let stand 10 minutes. Serves 8 |
