Blondies With Chocolate Chips

INGREDIENTS:
  • 1 can white beans, drained and well rinsed
  • 3/4 tsp baking powder
  • 1/8 tsp baking soda
  • 1/4 tsp salt
  • 3/4 cup light brown sugar
  • 2 tsp vanilla extract
  • 1/4 cup ground flax
  • 1/4 cup Earth Balance vegan butter
  • 1/2 cup dark chocolate chips (check the label if you’re strict vegan)
INSTRUCTIONS:
Preheat oven to 350 degrees.

Blend all the ingredients except the chips in a food processor until smooth.

Mix in the chocolate chips, and scoop into a greased  8×8 pan.

Bake 30 minutes. Be careful not to overcook.

Cool before cutting into squares.
