Cranberry and Quinoa Salad
INGREDIENTS: |
1 1/2 cups water 1 cup uncooked, rinsed quinoa 1/4 cup chopped red bell pepper 1/4 cup chopped yellow bell pepper 1 finely chopped small red onion 1 1/2 teaspoons curry powder 1/4 cup chopped fresh cilantro 1 lime, juiced 1/4 cup toasted sliced almonds 1/2 cup minced carrots 1/2 cup dried cranberries salt and ground black pepper to taste |
INSTRUCTIONS: |
Prepare quinoa according to package directions. Cool and put into a bowl and refrigerate until cold. Remove from refrigerator and stir in the other ingredients. Chill well before serving. |
